10 Positive Things About a Challenging Economy, #1:  More time with family.   I love spending time with my family and although I don’t live close to may parents and sister we spend quality time together over skype every weekend.  We have cocktail hour and it’s so much fun.  It’s like I get to see them every week. Take advtantage of this time and enjoy a Saturday evening dinner with your parents, BBQ on the deck, make home pasta with Mom and do a project with your sibling.  Re-connect and nuture this very important relationship.

Quick & Easy Holiday Recipes

We’ve had a fantastic weekend with John’s Mom and Grandma in town.  On Saturday evening we picked up some Fresh Northwest Fish, from the Fisherman at Granville Island, and had a feast of food and a great time.  At the end of dinner, I realized I didn’t grab anything for dessert and my Mother-in-law loves dessert so I wanted to have something rich and chocolaty.  I quickly remembered a super Chocolate Souffle’ recipe my girlfriend Elsa had given me years ago.  It’s a super recipe as you have everything in your pantry and can be made in a few minutes.  Pefect!

Chocolate Souffe’: Anyone who likes chocolate will love this dessert and you can top it off with some fresh berries or fruit. 

4 oz semi sweet chocolate chips
6 Tbs. butter
1 1/2 Tbs. cornstarch
1/2 cup sugar
2 eggs
2 egg yolks
